Splitgill Mushroom Info
The split gill mushroom, scientifically known as Schizophyllum commune, is a lesser-known edible mushroom in Europe, but it has a long history of culinary usage across Asia and is valued in traditional Asian medicine, particularly in Japan and China. Though many European field guides list this species as inedible due to the tough and rubbery texture of the older specimens that are usually found in the wild, we've found that the young mushrooms, when cooked, have a pleasing meaty texture, similar to blue or pink oysters, and pack a surprisingly good umami punch despite their small size, making them a worthy addition to many dishes. With our ready-to-grow kit, you can watch them grow on your kitchen counter and harvest them at just the right time for the best flavour and texture.
The common name refers to the distinctive gill-like folds on the underside of the fan-shaped caps.
Fun Facts: Split gill is among the most widespread macrofungal species worldwide, occurring on every continent except Antarctica!
This species is also famous among biologists for its extraordinary mating system. Rather than having two sexes, they possess over 23,000 different mating types, the largest number recorded for any species.
Cooking Tips: We love them best simply pan-fried till the edges go crisp to bring out the addictive umami flavour, but they also work well simmered in soups and curries.
