Oudemansiella canarii, commonly known as the porcelain mushroom, is a delicate and visually striking species native to tropical America, southeast Asia, and Australia, where it grows on hardwood logs. Its fragile beauty and unique appearance make it a popular subject for mushroom photography enthusiasts.
Similarly to enoki/velvet shank mushrooms, they can be fruited in two different ways: in a CO2-rich environment which will give them long stems and smaller caps, or exposed to fresh air, which will make their caps much more full. When grown with longer, thinner stems, they have a delicate and crisp texture and a refreshing, peppery flavour similar to radish. They go well in noodle soups or are delicious pickled in vinegar.
These mushrooms can grow prolifically, giving many continuous flushes in quick succession.
