Lion’s Mane Steak with Cucumber Salad and Tahini Udon Noodles

This simple and tasty recipe is one way to cook your lion's mane mushroom like a steak, making the most of its meaty texture and fantastic ability to take on flavours. Credit for the recipe goes to Zara Byng @munchbyza on Instagram!



Ingredients (Serves 2): For the lion's mane steak in miso marinade:

Between 100-300g Lion’s Mane mushroom

1 tbsp (vegan) butter

1 tbsp sesame oil

2 tbsp miso paste

1 tsp soy sauce

1 squeeze lime juice

1 clove garlic, minced


For the smashed cucumber:

1 cucumber

1 tbsp soy sauce

1 tbsp rice wine vinegar

1 tbsp sriracha

1 tsp sesame oil

1 clove garlic, minced

1 tsp sesame seeds

Salt and pepper to taste

Noodles and tahini sauce:

2 packets udon noodles

150g frozen soy beans

3 tbsp tahini

2 tbsp lime juice

2 tbsp water

1 tsp agave

Salt and pepper to taste Method:


Smashed cucumber salad:

  1. Smash your cucumber with a rolling pin then roughly chop into bite sized chunks.

  2. In a bowl, mix the soy sauce, sesame oil, rice wine vinegar, sriracha, garlic, sesame seeds and salt and pepper to taste.

  3. Add the cucumber to the bowl and toss to coat. Set aside to marinate while preparing the rest of the meal.


Prepare the tahini sauce:

  1. To make the tahini sauce, add tahini, water and lime juice and mix well. It may look lumpy at first but keep mixing until smooth. Add agave and salt and pepper to taste.


Cook the lion's mane steak and noodles:

  1. Heat your pan over medium-high heat with sesame oil until it starts to smoke. Add the lion’s mane mushroom and press down with a heavy pan to release excess moisture. Cook until golden brown on both sides.

  2. Meanwhile, bring a pot of water to boil. Add the udon noodles, then forzen soy beans. Cook noodles to packet instructions.

  3. Make the miso marinade by mixing miso paste, lime juice, soy sauce, and minced garlic.

  4. Carefully take the lion's mane mushroom out the pan and smear with the miso marinade. Add back to the pan and fry off once again in a tablespoon of butter until the edges crisp up. Take out the lion's mane steak to rest.

  5. Deglaze the pan used for the mushroom by adding 1 tbsp of water and scraping up any browned bits.

  6. Drain the cooked noodles and soy beans and add to the deglazed pan. Add in the tahini sauce and stir through until the noodles are well covered.

  7. Cut the mushroom 2cm thick slices and place on top of the tahini noodles and soy beans.

  8. Add the cucumber salad then drizzle the leftover marinade on the noodles. Enjoy!
