Through our range of growing kits, courses & mushroom-inspired artwork, Fat Fox Mushrooms is passionate about helping you Grow, Learn & Thrive.

Handmade in London

From every step of growing and packaging our kits, handle every aspect of the process ourselves, ensuring quality at every stage and bringing a handmade, creative and personal touch to each of our products.

Starting as a humble mushrooms stall outside our studios, we began by selling our home-grown mushrooms to our friends and neighbours.

Today, we are proud to offer our range of products to the UK via our online store.

Our Story

For many years, Ben has been fascinated with the world of fungi. Whether it be spending time foraging wild mushrooms in the Finnish forest or carrying out his own mushroom projects, he always had one foot in the fungi world. In 2020, when the world went into lockdown, Ben and Lex decided to join forces and come up with a creative way to share the joy of mushroom cultivation with a wider audience. With the help of a small grant, they provided 100 free kits to local residentsex and Fat Fox Mushrooms was born.

Combining Ben's practical ability for mushroom cultivation with Lex’s passion for creative community outreach, they have struck a balance that has meant the interest in their products has grown and grown.

Ben and Lex believe that fungi have the potential to play a key role in shaping all of our futures!

Meet the Team

Lex Truax

Co-founder, Managing Director & Outreach Lead

Lex oversees the day-to-day logistics, and production planning, as well as research, testing, and hands-on growing. She helps Fat Fox turn ideas into practical, working systems. She also leads outreach and education with a focus on collaboration and community, Lex builds partnerships that connect growers, innovators, and educators.

Background

Lex has a background in education, having taught students from toddlers to university level across three continents. She specialises in creating engaging educational materials and community outreach programmes. Outside of work, Lex enjoys yoga, singing, and spending as much time in nature as possible.

Ben Blackwell

Co-founder, Director of Cultivation Infrastructure

Ben is Co-founder and Director of Cultivation Infrastructure at Fat Fox Mushrooms, designing, building, and maintaining the systems that support every stage of production. From growing rooms and lab setups to custom equipment and environmental controls, he ensures the operation runs efficiently, reliably, and at scale.

Background

Ben has a background in forestry, permaculture, and education. He managed the Level 2 Forestry & Arboriculture course at Capel Manor College and is a qualified Level 3 Forest School Practitioner. In his free time, he enjoys exploring new building techniques, developing sustainable projects, and spending time with his family as a proud father.

Joanne Lam

Marketing Lead & Mushroom Growing Support

Joanne combines creativity with practical growing knowledge, supporting product development, growers, and brand collaborations. She leads marketing efforts and helps share Fat Fox’s work, values, and products with the wider community.

Background

An avid mycophile, Joanne’s passion for fungi began with photographing and identifying wild mushrooms. She has expanded her experience through home cultivation, volunteering at community gardens, and completing a horticulture diploma at Walworth Garden. Joanne brings extensive marketing and community engagement experience, including campaigns, influencer collaborations, and online support systems. Outside of work she enjoys going to gigs, taking photos in the woods, the odd bit of foraging and making music.

Andre Sorensen

Master Mycologist & Fungal Research Lead

Andre produces fruiting blocks and grain spawn, leads laboratory work, and spearheads Fat Fox’s mushroom breeding programme. Driven by curiosity and continual learning, he is always refining methods and exploring new species, strains, and techniques.

Background

Andre’s love of nature began in the English countryside and led him to study horticulture at Niagara College in Canada, specialising in plant science, sustainable agriculture, and soil ecology. He discovered the vital role of fungi in growing systems and returned to London to work in hydroponics. Andre started cultivating mushrooms at home, gradually refining his techniques and building advanced lab skills. Outside of work, he enjoys experimenting with no-till beds and innovative growing methods.
