Satisfy your crispy duck cravings with this brilliant recipe from @plantbasedwithshaz!
She transforms the firm, meaty texture of pink oyster mushrooms into a mouthwatering vegan twist on the classic favourite.
Notes from Shaz: "The trick is to coat the mushrooms in cornflour and then fry until golden brown & crispy. Then toss them back into some sauce...works like a dream!"
Ingredients:
A cluster of pink oyster mushrooms
2 tbsp cornflour
Garlic granules, paprika, parsley, cajun seasoning
Sauce (agave syrup, avocado oil, coconut aminos, liquid smoke, tomato paste, 1 tbsp lemon juice)
Method:
Using your hands shred the mushrooms into smaller pieces
Coat with cornflour and seasonings
Shallow fry in some oil
Mix the sauce in a jar or bowl
Drain the mushrooms and set aside
Pour the sauce into the pan ( remove excess oil from the pan!)
Add the coated mushrooms back in and mix until well combined
Serve with some steamed pancakes, spring onion, and cucumber
