Mushroom Burgers Recipe

Give your mushrooms the proper burger treatment with this simple and delicious vegan burger recipe from @plantbasedwithshaz! This recipe makes some meaty patties using pink oyster and lion's mane mushrooms, but it would also work well with any other types of oyster mushrooms with a meaty texture, such as black pearl oyster, blue oyster, phoenix oyster, or king oyster.



Makes 4 burgers

Ingredients:

Lions mane mushrooms (approx. 200g-250g)

Pink oyster mushrooms (approx. 200g-250g)

Fresh dill

1 red onion chopped

2-3 cloves garlic

1-2 tbsp Nutritional yeast (a smokey bacon flavour nutritional yeast mix works well)

2 tbsp Chickpea flour for binding (if you don't have nutritional yeast, you can add another tablespoon to help bind the mixture)

Seasonings to taste (your choice of bbq spice mix, paprika, garlic granules, parsley flakes, cumin) Liquid smoke

Avocado oil for cooking




Method:

  1. Remove any excess water from the mushrooms by searing in a pan

  2. Chop or shred into pieces and blend with garlic and fresh herbs

  3. Transfer mushroom into a operate bowl and add in chickpea flour and red onions to bind, add in nutritional yeast and seasonings, mixing well until it binds together. If the mixture is too dry, you can add in a dash of oil

  4. Form into burger patties (you can set in the fridge for a few hours or overnight)

  5. Heat some oil in a pan and shallow fry on both sides

  6. Serve in your favourite bread bun and fillings
