Shiitake mushroom (Lentinus edodes) also known as 'black forest mushroom', 'black mushroom' is famously delicious and a very popular mushroom in East Asian cuisine.
Shiitake was originally handpicked from the wilds of mountainous regions across Asia. It was first cultivated in China about 1,000 years ago and is now one of the most widely cultivated mushrooms in the world.
In nature, shiitake grow in groups on the decaying wood of deciduous trees, particularly shii (from which they take their common Japanese name) and other chinquapins, chestnut, oak, maple, beech, sweetgum, poplar, hornbeam, ironwood, and mulberry.
Shiitake has a sweet, buttery, umami flavour that is great for making vegan stock or to add a burst of flavour to any dish. They dehydrate and rehydrate particularly well, so can be stored long-term.
